It is cultivated in the Bitonto countryside and in the central and south-western areas of the province of Bari. The variety consists of trees with long and pendulous twigs. The plants of this variety are generally centuries old and produce sweet and small fruits. The Evo Oil obtained from it has a very pleasant flavour, an intense yellow colour tending towards green and is recognized by its aroma and fruit flavour, which is not particularly accentuated with a light hint of almond.

It is a native variety of the Murgia area of Puglia and is characterized by its uniqueness in taste and aromas. The delicate and fine notes stand out in the mouth and the taste is characterized by a medium and light fruity that gives sensations of spring scents.

Characterized by its purple colour, it’s the symbolic cultivar of the region. The spicy notes typical of this strong fruity Evo Oil, have always conquered the palate of consumers. The very high presence of polyphenols, especially oleuropein, makes it one of the healthiest olives ever due to its powerful antioxidants.

It is one of the most widespread varieties of olives in the Gargano area, widely cultivated in the north of Foggia. But Ogliarola is a pressing cultivar present throughout the Apulian territory, taking on different nuances and flavours depending on the areas where it is grown. Ogliarola is a more delicate cultivar than other Apulian ones but the Gargano variety, thanks to the dry climate, is safe from parasite and fly attacks. The Garganica cultivar releases aromas of freshly cut grass, bay leaves, and almonds but also of yellow apple, carob and green banana, scents that vary slightly from year to year, but constitute the character of Ogliarola Garganica.

Cultivated in the northwest area of the province of Foggia and precisely in the Torremaggiore countryside. It has a variable colour from green to yellow. The Evo oil obtained is characterized by a fruity smell with a harmonious sensation of fresh fruit and almond making it sweet, bitter and spicy.
